White Sauce!

Homemade white sauce? Yum!

You will need…

1/2 pint of heavy willing cream
Parmesan cheese
Garlic
Spinach
A tablespoon of butter
Spices
Lemon juice
Tablespoon of flour

In a large pan, mix the cream, flour, and butter. Whisk until combined.

Chop up as much spinach as desired, toss in pan.

Put in Parmesan to taste, along with spices. Garlic salt, red pepper, salt, pepper, basil, etc.

A capful of lemon juice for a fresh taste! If the sauce is too thick, add some milk.

Pour over noodles and enjoy!

Easy But Delish Pizza

This is really just a cheese pizza, but hey, I think it’s delish…

You will need…

Crust
Sugar
Olive oil
Water
Yeast (we use pizza yeast)
Flour
Salt

Pizza
Mozzarella cheese
Cheddar cheese
Garlic
Red Pepper
Fennel
Greek Seasoning
Oregano
Basil
Sauce (homemade is the best, but we’ll use pasta sauce for convenience)

Make the crust. If you don’t have the yeast with the instructions, I think it’s 2 teaspoons sugar, 2 teaspoons olive oil, 2/3 cup water, yeast, shake of salt, 1 3/4 cup flour. I always end up adding more flour.

Make the pizza. The end. Just kidding, but really, you guys know how to make pizza!

Throw some sauce on there, enough to cover the bottom crust. Don’t use too much, since your making your own dough, it may get soggy.

Toss the spices on ( I usually do my spices before and after the cheese layer for double the flavor)

Sprinkle the cheese to your liking, and mix it around. (Spinach is good on top too, yum!)

More spices.

Voila!

Pop it in the oven at 350 degrees for about 10 minutes. Really, the time always varies, so just keep an eye on it. Also, when you check on it, check the bottom because sometimes you think oh this can cook longer but the underside is burning. So keep an eye out!

Sea Scallop Pasta

You will need…

Sea scallops

Parmesan cheese

Pasta

Lemons (2)

Butter

Olive Oil

Garlic

Broccoli

Onions

 

Begin to boil water for the pasta.

In a skillet, melt about a tbsp of butter with 3 or so tablespoons of olive oil.

Chop garlic and throw into skillet.

Zest both lemons and squeeze one into the skillet. It may seem like overkill, but it wasn’t, even coming from someone who isn’t a big lemon fan.

In another, smaller skillet, cook the scallops. They dont take long. I tried to be lazy and cook them in the same skillet, but a bunch of water came out of them, and it took awhile to boil out! So go separate skillets!

Chop up an onion and toss it into the skillet with the garlic.

Once the scallops are done, add them to the other skillet and simmer on low for awhile. Spice with whatever you like. Of course, I used garlic salt, sea salt, oregano, basil, a wee bit of red pepper and some Greek seasoning.

Once the pasta is close to done, toss the chopped up broccoli into the pot. I like my broccoli al dente.

Drain the pasta and broccoli, and add the skillet mixture into the pot. Grate some Parmesan on top.

White Sauce Pasta

You will need…

Shrimp

Broccoli

One Bell Pepper

A can of white sauce pasta

One onion

Garlic

Spices

Penne pasta

 

Chop up one head of broccoli, the onion, the pepper, and about 3 cloves of garlic.

In a bot, begin to boil some water for the pasta.

Cook the shrimp in a skillet. Spice them accordingly. I used onion and garlic medely.

Then add the peppers, onions and garlic to the shrimp. Reseason as needed.

When the pasta is close to done, add the broccoli to the water and let it cook until the pasta is done.

Drain.

Add the white sauce to the veggies. This way, the sauce will absorb the spices and oils.

After a minute, add the sauce/veggies to the pasta/broccoli pot.

Stir.

Add Parmesan as wanted.

Red Pasta Sauce

You will need…

3 large cans of tomato sauce (or five little ones)

1 can of diced tomatoes (optional)

1 onion

Fresh basil

A head of garlic

Spinach (frozen or fresh)

Penne pasta (or whatever kind you like)

Ricotta cheese

 

Add the cans of tomato sauce/diced tomatoes to a pot. Turn to simmer. Stir occasionally.

Chop about 3/4 of the onion up and add to the pot.

Chop up about 4 to 5 chunks of garlic (that’s a lot of garlic, but we love it!) and throw into the pot.

Chop up about 5 basil leaves and 8 or 9 spinach leaves and throw into the pot. If using froze spinach, just eyeball it.

Add needed spices along the way. I used garlic salt, sea salt, red pepper, red pepper flakes, oregano, and basil (dried).

Boil the pasta noodles until done to your liking.

Toward the end of the noodles, add a few scoops of ricotta cheese into the sauce. Allow to melt fully.

Throw the noodles into the sauce (after draining) and garnish with a basil leaf!

Broccoli Pasta

You will need…

Enough pasta for 2 people

4 cloves of garlic

Water

Salt

3 cups of broccoli

Olive oil

Parmesan cheese

1 tbsp of butter

 

Bring water to a boil and add pasta accordingly.

In a skillet, melt butter.

Chop garlic and add to skillet, lower heat to medium low. Add around a tbsp of olive oil, add more if needed. Stir occasionally.

About 5 minutes before the pasta is fully cooked, add broccoli to the pasta to cook with it. This will also add a slight broccoli taste to the pasta.

Drain the pasta, and set some of the pasta water aside to use later.

Stir the butter mixture into the pot with broccoli and pasta. Add the Parmesan cheese to your liking to make a cheese sauce. And add the pasta water as needed so it’s not too sticky.

Eat and enjoy!
