Turkey Pesto Meatballs



These are amazing. I’ve made them once before but I didn’t get a chance to post about it. So I will now! Meatballs are great. Easy, fairly quick, versatile and easily freezable for later. I got this recipe from Baked Bree, I just added a few spices and garlic. Because who doesn’t love garlic?

You will need:
2 pounds ground turkey breast
1 1/2 cups bread crumbs
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1/2 cup pesto sauce
1/3 cup grated Parmesan cheese
2 teaspoons of garlic
Teaspoon of basil, oregano and Rosemary
2 eggs whites


Hayati’s mouse got into the picture 🙂

Mix all ingredients. Roll into balls. Throw in the oven.


Meatballs are easy peasy. Bake at 350 for 25-30 minutes.

My Life in 2014 Thus Far

I’m sure the world is dying to know what I’ve been up to while I’ve been MIA lately. Honestly, I’m sure no one gives a damn, but it is a little fun for me to pick some highlights from the past few months and look back through them. 🙂

This is one of my favorite pictures 🙂 It was about 12:10 on my birthday, a Monday, so I couldn’t drink (Sunday) since everything closed at midnight. So my wonderful coworkers threw me some booze and we hung out for several hours.

Went to an engineering pub crawl, though I’m far from an engineer 🙂


Volunteered with mentally disabled children to help them ride horses.


Finally got a picture with someone who means a lot to me.

Low Carb-in’ It Up

If you know me in the slightest, I am a magnet for sickness. Not that I’m always sick, but when I’m sick, I’m reaaaal sick forever. So of course, since colds and the flu and upper respiratory illnesses are going around in my area, I’m basically dying over here. Being sick, I have no energy to work out, nor can my extremely sore throat handle that pressure. While I’m waiting to go to the doctor and, hopefully, have her fix me up, I’ve been looking to incorporate some low-carb meals into my diet.

Welcome Back!

Okay, I’m really going to start blogging again.

I’ve said it a thousand times before, but I mean it!

Im really doing it.

I promise.

I’m getting back into it.

I hope everyone is doing well, having a good summer. I’m ready to start finding and creating some great new recipes to share with everyone. I need some new healthy recipes for my recipe box, anyway.

As for what’s new with me, just became a senior in college, moved into a new apartment. I have the best kitty ever.

Chocolate Chip Cupcakes

DSC_001444I think I already have a post about chocolate chip cupcakes, but guaranteed, these are gooey-er and more delicious.
You will need…
1 1/2 sticks of butter
3/4 cup light brown sugar
1/4 cup sugar
1 large egg
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoon vanilla extract
2 cups all-purpose flour
1  1/4 cup semi-sweet chocolate chips
Cream the butter and sugars until light and fluffy.Add in egg and vanilla.
In a separate bowl, combine all dry ingredients. Add in to butter mixture slowly. Mix well after each addition.
Fold in choc’o’chips.
Bake at 350 for fifteen minutes or until the toothpick comes out clean.
For the frosting, I opted for plain old vanilla.

Snickerdoodle Cupcakes


These. Are. Amazing. And my favorite thing about them is that they don’t take any weird, specific ingredient, so they can basically be made anytime.

I got this recipe from Tidy Mom. I only changed a few things from her splendid recipe.

You will need…

1 1/4 cup flour
1 teaspoon vanilla
3/4 cup milk
1/2 tablespoon baking powder
1/4 teaspoon salt
1 tablespoon cinnamon
2 teaspoons nutmeg
1/2 cup butter
3/4 cup sugar
2 eggs

Cream sugar and butter until light and fluffy. Add in each egg one at a time.

Combine all dry ingredients in a separate bowl and slowly add into butter mixture, alternating with milk. Mix well after each addition.

Bake at 350 for fifteen minutes or until toothpick comes out clean.


6 tablespoons butter
3 tablespoons brown sugar
1 tablespoon milk
1/2 teaspoon cinnamon
1½ cups powdered sugar

Mix butter and powdered sugar until creamy. Slowly add in the other ingredients.



Kahlua Chip Cupcakes

H’okay. I had these nice, clear, beautiful pictures of these cupcakes. But since I haven’t been able to post about them, someone may have deleted them. Or lost the sim card with them on it. Either way. Sorry you’re stuck with a poor picture.


I found this recipe on how sweet it is. 

Which is amazing by the way.

You will need…

1 1/8 cups all purpose flour
1/4 cup cocoa powder
1 1/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sugar
1 egg
2 teaspoon vanilla extract
3 tablespoons kahlua extract
1 stick of butter
1/2 cup chocolate chips
1/2 cup white chocolate chips

Cream butter and sugar. Add in egg and extracts. Combine dry ingredients in separate bowl and add slowly into butter mixture.

Mix well after each addition. Fold in chocolate chips.

Bake at 350 for 15 minutes or until toothpick is clean.

Frosting2 sticks of butter
3 1/2 cups powdered sugar
1 tablespoon kahlua extract
1 teaspoon vanilla extract

Cream butter and sugar. Add in extracts.


Chocolate & Whiskey Cucpakes


So, I just want to apologize. My keyboard is still screwed to hell and therefore it’s too hard to post anything. Do you know how hard it is to have to keep coping and pasting a y? It is plain obnoxious to say the least. And it’s still not fixed. This isn’t even my computer.

I just had to post a few recipes since I’ve been neglecting it. I miss you guys.

I used Annie’s Eats recipe for the cupcakes. The following is my version.

You will need…

1 cup cocoa powder
3/4 cup boiling water
½ cup sour cream
1¾ cups sugar
2 teaspoon vanilla extract
1¼ cups all-purpose flour
¾ teaspoon baking soda
½ teaspoon salt
2 sticks of butter
2 eggs

Cream butter and sugar in main bowl.
In separate bowl, mix sour cream, hot water and vanilla.
In yet, another bowl mix all dry ingredients. Get ready to do dishes.

Add in the sour cream and flour mixture alternatively, mixing well after each addition.

Bake at 350 for 15 minutes or until toothpick is clean.
Frosting was iffy. I eye balled it, but my batter made way too many cupcakes. So just use your brain.

1 stick of butter
3 cups of powdered sugar
2 teaspoons of whiskey
a dash of milk, depending on how creamy you like your frosting

Cream sugar and butter. Add the rest. Duh.



flourless chocolate cupcakes

DSC_0065so, were going lowercase today. half my keyboard seems to not be working, including the y key, which i have copied and pasted, and all my side keys like tab, shift, etc.


for easter, i made some flourless chocolate cupcakes, since two of the family members are on the whole low carb nonsense.

i found this recipe at seedthetable and didn’t change a thing. half because it was already amazing and half because i’ve never done the whole ‘flourless’ thing, so i was taking strict orders.

the recipe is as follows…

1 1/2 cups (10 1/2 oz) bittersweet chocolate chips- i used the ghirardelli bag, which was 10 oz.
2 sticks butter
4 eggs
4 egg yolks
1/2 cup sugar
2 tbsp. cocoa powder
1 tsp vanilla extract

melt down the chocolate and butter in a double boiler or the microwave if you’re in the mood for working hard. let cool.

in a separate bowl, cream the sugar and eggs until thick. stir in melted chocolate mixture, powder and vanilla.

after pouring into cupcake tins, bake at 375 for 20 minutes, if you’re looking for a fudgy-er consistency, take out earlier.

Almond Chocolate Chip Cupcakes


Snowed in all day? Bakebakebake.

You will  need…

2 large eggs
1 cup granulated sugar
1 large egg white
2 cups flour
1 teaspoon baking powder
1/2 cup unsalted butter
1 teaspoon vanilla extract
1 1/2 teaspoons almond extract
1/4 teaspoon salt
2/3 cup milk
3/4 cup of chocolate chips (I like mini!)

Cream sugar and butter until fluffy. Add eggs and egg white in, mixing after each addition. Add extracts.
In separate bowl, combine all dry ingredients and add slowly to butter mixture. Mix well after each addition.
Lastly add milk, and fold in chocolate chips.

Bake at 350 for 15 minutes or until golden brown.



One stick of butter
3 cups powdered sugar
One teaspoon of  vanilla
1/2 -3/4 cup cocoa powder
3-5 tablespoons of milk

I had some left over salted caramel frosting, so I used that on five out of seven cupcakes. I whipped up some chocolate (which was a much better mix with the cake) frosting, so that’s why my measurements are eyeball-ed.
