Really, any quesadilla is Mexican. We’ll just put a sombrero on the Parmesan and call it Mexican.
One red onion
Corn or Flour tortillas
Garlic powder (and or real garlic)
2 tablespoons mayo
2 tablespoons sour cream
Sriracha (to taste)
Sauté onions in skillet beforehand to your preference.
Combine cheeses, onions, and chicken in bowl.
Place tortilla in skillet over medium heat and place desired amount of cheese mixture on top of it.
Sprinkle with rep pepper, garlic and any other spices.
Put other tortilla on top and wait for cheese to melt and tortilla to brown.
Flip as needed, cut and enjoy!
Combine mayo, sour cream and sriracha until blended well.
