Tomato Ricotta Pizza from AllYou

I tried the previous recipe I posted from the allyou magazine! Here is my updated recipe!

You will need…

Pizza dough (or make your own)
Olive oil
One tomato
Part skim ricotta cheese
Assorted fresh herbs such as basil, oregano, thyme, sage (we got ours from our garden!)
Parmesan cheese

Make your pizza dough, however it is you do it.
Pour enough olive oil to cover the bottom crust lightly, brush the crust once over too.
Add the ricotta-the recipe calls for one cup, I just threw some on there-enough to cover the bottom in a medium layer. You really have to get in there with your hands since ricotta is so packable.
Chop some spinach and throw it on top, along with some chopped up garlic.
Chop up the tomato into thin slices and spread it around the pizza
Throw some more spinach on, along with the herbs.
Sprinkle some Parmesan on top, and add some salt, pepper, red pepper, whatever.

Bake at 350 for about 15-20 minutes.
