Quinoa Cookies with Cherries and Walnuts

So, for Christmas, Alex’s dad’s girlfriend, Patricia, got us some quinoa and other assorted healthy goodies. Never having tried quinoa, I was a bit nervous. What do I do with little pebbles? Anyway, having tried them (it?), I like ’em. They have a nutty/earthy taste that is subtle, but always there. Alex, on the other hand, hates it. So, now we have all this quinoa and no one to eat it besides me. Lately I’ve been trying to sneak it into little things and these cookies are a product of that sneakiness.

I found these at power hungry and the original recipe is a little different. Here is my version.

1 1/4 cups whole wheat flour
1 tbsp cornstarch
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
1 cup sugar or healthier alternative
1 egg
1/2 cup coconut oil, or butter
1 tsp vanilla extract
1-1/2 cups cooked quinoa (that is one cup water and 1/2 cup quinoa boiled until it absorbs the water.)
3/4 cup dried cherries
1/2 cup walnuts
2 tbsp plain yogurt
honey to taste, about 3 tbsp

ImageBake them at 350 for about 15 minutes or until golden!
