Healthy Morning Glory Muffins

DSC_0051Today, I made some muffins. Not just any muffins. Some delicious, healthy muffins. I know, I know. You’re excited too.

You’re probably thinking why does she have liners on muffins?  Because our cupcake pan has cracks in it and is starting to rust.

I took this recipe from Can You Stay For Dinner, yet again. That woman is amazing.

Here’s my version.

1 1/4 cup whole wheat flour
1 cup all purpose flour
2/3 cup sugar
1½ teaspoons baking soda
½ teaspoon baking powder
1 teaspoon ground cinnamon
¾ teaspoon salt
½ cup coconut oil
3 eggs
1 (8-ounce) can crushed pineapple with the juice.
1½ cups shredded carrots
1 cup shredded coconut,  mine was straight from the coconut!
½ cup walnuts

Bake at 350 for 15 minutes.

Enjoy the next morning for breakfast 🙂
