Almond Chocolate Chip Cupcakes


Snowed in all day? Bakebakebake.

You will  need…

2 large eggs
1 cup granulated sugar
1 large egg white
2 cups flour
1 teaspoon baking powder
1/2 cup unsalted butter
1 teaspoon vanilla extract
1 1/2 teaspoons almond extract
1/4 teaspoon salt
2/3 cup milk
3/4 cup of chocolate chips (I like mini!)

Cream sugar and butter until fluffy. Add eggs and egg white in, mixing after each addition. Add extracts.
In separate bowl, combine all dry ingredients and add slowly to butter mixture. Mix well after each addition.
Lastly add milk, and fold in chocolate chips.

Bake at 350 for 15 minutes or until golden brown.



One stick of butter
3 cups powdered sugar
One teaspoon of  vanilla
1/2 -3/4 cup cocoa powder
3-5 tablespoons of milk

I had some left over salted caramel frosting, so I used that on five out of seven cupcakes. I whipped up some chocolate (which was a much better mix with the cake) frosting, so that’s why my measurements are eyeball-ed.
